Cranberry Snowballs

This is your basic rice crisp cookie gone festive. Rolled in coconut and studded with small flecks of dried cranberries, these snowballs will be a hit at any holiday celebration

Ingredients
- 3 c. miniature marshmellows (or 40 large)
- 1/4 c. butter
- 1 1/2 tsp. vanilla
- 1/4 tsp. coconut extract
- 3 c. rice krispie cereal
- 1/2 c. chopped dried cranberries
- 2 c. sweetened flaked coconut
Preparation
Step 1
In large saucepan over med-low heat stir marshmellows with butter until melted, 3 to 5 minutes.
Remove from heat and stir in vanilla and coconut extract (if using).
Add half the cereal, stirring to coat.
Stir in remaining cereal, cranberries and half of the coconut until completely coated
Let cool slightly
Using buttered hands, shape heaping teaspoonfuls into balls.
Place on waxed paper-lined baking sheets
Spread remaining coconut in large shallow dish
Roll balls in coconut to coat
Store in fridge for up to 1 week.
