Lemon Bread

Ingredients

  • 1 c. sugar
  • 2 eggs
  • 5 T. melted shortening or 1/3 c. oil
  • 1/2 c. milk
  • 1 1/2 c. flour
  • 1 t. baking powder
  • 1/2 t. salt
  • 1 c. chopped nuts (ground pecans)
  • Grated Rind of one lemon

Preparation

Step 1

Beat eggs; add sugar and mix well. Add melted shortening. Sift flour and dry ingredients together and add to eff mixture alternating with milk. Add lemon rind and nuts. Pour into greased load pan. Bake at 375 degrees for 50 or 60 min. When baked, while still hot, spread sides with mixture of lemon juice and 1/3 c. sugar.
