ZUCCHINI COOKIES

  • 3 eggs
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 1 cup grated unpeeled zucchini, packed
  • 1/2 cup chopped nuts
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup quick oats
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 cup raisin, white, optional
  • 1 cup coconut

Preparation

Step 1

Preheat oven to 350 degrees

Beat eggs: gradually beat in sugar, oil and vanilla. Combine dry ingredients; add to first mixture alternately with zucchini. Stir in raisins and nuts, coconut and oats. Mix well. Place by spoonfuls on greased cookie sheet and bake for 12-15 minutes.
