Ingredients
- 4 plum tomatoes, seeded and cut into 1/4-inch pieces
- 1 small jalapeño, seeded for less heat, if desired, finely chopped
- 2 tablespoon(s) lime juice
- Kosher salt
- Pepper
- 2 tablespoon(s) chopped fresh cilantro
- 2 ounce(s) (about 1/4 cup) Cotija or feta cheese, crumbled
Preparation
Step 1
In a medium bowl, toss the tomatoes, jalapeño, lime juice, and 1/4 teaspoon each salt and pepper.
Fold in the cilantro and then the cheese.
