  • CREAM CHEESE ICING:
  • 2 cups shortening
  • 2 cups sugar
  • 1 16 oz. can pumpkin
  • 2 eggs
  • 2 teaspoons vanilla
  • 4 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 oz. cream cheese, softened
  • 1 teaspoon vanilla
  • 1 Tablespoon cream or milk
  • 3/4 stick oleo
  • 2 1/2 cups powdered sugar

Preparation

Step 1

Preheat oven to 350 degrees

Cream shortening and sugar. Add eggs, pumpkin, and vanilla. Beat together. Stir together in a separate bowl: flour, baking powder, cinnamon, baking soda and salt. Add to batter and mix well. Drop by teaspoonful onto greased cookie sheet. Bake for 12-15 minutes. Ice with cream cheese icing.
