Spicy Carrot Sambal (slaw salad)

Ingredients

  • 8 oz carrots peeled
  • 2 TBS vegetable oil
  • 6 whole garlic cloves, peeled
  • 1 jalapeno, stemmed and cut into 1" pieces
  • 2 TBS sugar
  • 1 TBS lime juice (fresh is best)
  • 2 tsp soy sauce
  • 1 scallion thinly sliced (both white and green parts)
  • 3 TBS chopped cilantro

Preparation

Step 1

Finely chop jalapeno and garlic....set aside.

Shred carrots with food processor or grater.

Put oil, garlic, and jalapeno in small skillet over medium heat and cook, stirring until garlic is light brown (about5 min).

Remove from heat.

Mix sugar and garlic mixture in a bowl, cool.

Add the lime juice and soy auce and stir to dissolve the sugar completely. Add the carrots, scallion, and cilantro.

Toss and serve.
