MANDARIN PINEAPPLE CAKE

Ingredients

  • FROSTING:
  • 1 pkg yellow cake mix
  • 3/4 cup veg. oil
  • 4 large eggs, room temp.
  • 1 (11-oz) can mandarin oranges with juice
  • 1 (20-oz) can crushed pineapple in heavy syrup (remove 1/3 to 1/2 of juice)
  • 1 (3 1/2-oz) box of vanilla instant pudding
  • 1 (8-oz) Cool Whip, thawed

Preparation

Step 1

Preheat oven to 350F.

Add cake mix, oil, eggs, and mandarin oranges with the juice in large bowl; mix for 3 minutes.

Put in 9x13-inch greased and floured baking pan. Bake for 30 to 35 minutes.

Remove and cool on rack.

FROSTING:

Mix all frosting ingredients on slow, spread over cake and chill for at least 4 hours.
