DATE AND NUT BALLS

  • 1 stick oleo
  • 1 8 oz. chopped dates
  • 1 teaspoon vanilla
  • 1 egg; beaten well
  • 1/2 cup sugar
  • 2 cups rice crispies
  • 1 cup chopped nuts
  • coconut flakes

Preparation

Step 1

Mix together the oleo, chopped dates, vanilla, beaten egg, and sugar. Place in a pan and cook for about ten minutes over med heat or until mixture pulls from sides of pan. This will be thick. Cool. Add rice crispies and chopped nuts. Roll into balls. Then roll in coconut (when you roll these cookies, be sure to grease your hands with oleo 1st - nobody told me and I had a hell of a time).
