Ingredients
- 1/4 cup coarsely chopped walnuts
- 1/4 cup golden raisins presoaked in water
- 1 cup grated carrots
- 1 teaspoon lemon juice
- 4 tablespoons corn oil
- 3 large eggs
- 1/2 cup non dairy cream
- 3 tablespoons water
- 2 cups Authentic Foods Pancake & Baking (something)
- 1 cup Authentic Foods Maple Sugar?
- 2 tablespoons sugar
- 1/4 teaspoon baking powder
- 2 teaspoon cinnamon
- 1/4 teaspoon Authentic Foods xanthan gum
- 1/4 teaspoon allspice
- 1/2 cup chopped walnuts
Preparation
Step 1
preheat oven to 350. in medium bowl, combine pancake and baking mix, maple sugar, sugar, baking powder, cinnamon, xanthan gum, allspice, oil, egg, non dairy cream, lemon juice and water; add to contents of medium bowl, and add chopped wlanuts, grated carrots, and presoaked raisins. pour batter in 8 inch round pan. bake at 350 for 40 minuts or until golden brown. cake is done if pick inserted in center comes out clean. cool in pan for 5 minuts. remove from pan and cool completely before frosting.
Cream Cheese Frosting:
1/4 cup unsalted butter softened
2 cups sifted confectioners' sugar
6 oz cream cheese, softened
2 teaspoons fresh lemon juice
cream butter and cream cheese. add sugar and lemon juice, beat
