Ingredients
- 3 cups Unblanched Almonds (Raw)
- 1-1/4 cups Fresh Lemon Juice
- 1 tsp Sea Salt
- 1 tbsp Turbinado Sugar
- 1 tbsp Extra Virgin Olive Oil
Preparation
Step 1
Place almonds in a medium sized bowl. Cover with the fresh lemon juice. Soak the nuts for 30 minutes.
Pour the almond mixture into a strainer, shaking it to remove most of the lemon juice. Pour onto a parchment lined baking sheet and bake in a 325 degree oven for 15 minutes.
Pour the hot nuts into a large bowl and lightly toss with the olive oil, the sugar and the salt. Return the nuts to the baking sheet and bake 10-15 minutes longer, or until slightly browned.
When they cool completely, try a couple and see if they are roasted to your liking. If not, put them back in a 275 degree oven for 10 - 20 minutes.
After removing from the oven, let sit for about 10 minutes on pan. Try not to stir them up until they have cooled completely. This will help keep the salt/sugar on the nuts.
When completely cool, place in an airtight container.
