Ingredients
- Coconut Kisses
- 1 c. brown sugar
- 2 stiff-beaten egg whites
- 2 cups corn flakes
- 1 c. moist shredded coconut
- 1/2 c. chopped walnuts
- 1/2 tsp. vanilla
- Beat sugar into egg whites. Fold in corn flakes, coconut, and nuts.
- Add vanilla. Drop by teaspoonful onto well greased cookie sheet.
- Bake in350 F. oven 15 to 20 minutes.
- Place pan on damp towel; remove cookies immediately with spatula. (If cookies stick to pan, return to oven to soften). Makes 1 1/2 doz kisses
- Coconut Macaroons
- 1/2 c. egg whites (4 - 5 egg whites)
- 1/4 tsp. salt
- 1 1/4 c. sugar
- 1/2 tsp. vanilla
- 1 1/2 c. moist shredded coconut
- Beat egg whites and salt till soft peaks form.
- Gradually add sugar beating until stiff peaks form.
- Fold in vanilla and coconut.
- Drop from teaspoon 2 inches apart on cookie sheet covered with paper.
- Bake in 325 F. oven for 20 minutes.
- Cool slightly before removing from pan.
- Makes 2 1/2 dozen.
- Almond Coconut Squares
- 6 tbsp shortening
- 1/2 c. sugar
- 1 egg 1 tsp. vanilla
- 1/2 c. moist coconut
- 1 c. flour
- 1/4 tsp. salt
- 1 tsp baking powder
- 1/4 c. slivered almonds
- Thoroughly cream shortening and sugar; add egg and beat well.
- Add vanilla and coconut.
- Mix (sift) together all dry ingredients.
- Add to creamed mixture; beat well.
- Add nuts.
- Spread in greased 13" x 9 1/2" x 2" pan. Bake in 350 F. oven for 20 minutes.
- Cut into squares and remove from pan while still warm. Makes 2 dozen squares.
