Strawberry Mojito

Ingredients

  • Strawberry syrup:
  • 4 strawberries, coarsely chopped
  • 1 lime, cut into 4 wedges
  • 1/4 c. fresh mint leaves
  • 1/4 c. strawberry syrup(see below)
  • 1/4 c. white rum
  • 1/4 to 1/2 c. sparkling water
  • 16 ozs. strawberries, chopped
  • 1 c. sugar

Preparation

Step 1

Muddle 2 strawberries, 2 lime wedges, and 2 T. mints in each of 2 glasses.
Fill each glass with ice, and stir in 2 T. each Strawberry Syrup and rum.
Top with sparkling water.

Syrup:
Combine strawberries, sugar and 1 c. water in a saucepan over medium heat.
Bring to a boil, reduce heat, and simmer 10 minutes, stirring frequently.
Strain, discarding solids, and pour into a glas jar. (Skim foam from top if necessary.)
Cool completely.
Cover and store in refridgerator up to 2 weeks.
Makes 2 cups.
