squash soup

Pureed pumpkin may be used instead of squash

Ingredients

  • 1 cup mashed cooked squash
  • 1 quart milk
  • 2 tblsp grated onion
  • 1/2 tsp powdered ginger
  • 2 tbslp butter
  • 3 tblsp flour
  • salt

Preparation

Step 1

Mix squash, milk, onion, and ginger in a pot and cook over mdm heat ten mins. Melt butter in a sml pan, stir in flour and cook until smooth and thick. Pour a little of the soup in the butter mixture, stirring until blended then slowly pour intil the soup. Add salt to taste. Cook until hot.
