Ingredients
- 1 tbsp Olive oil
- 1/2 c red onion, diced
- 2 Carrots, diced
- 2 stalks Celery, diced
- 1 swe red pepper, diced
- 1/4 tsp each salt and pepper
- 2 cans (540ml) lentils, rinsed and drained
- 1/2 c mediterranean vinaigrette
- 1/2 c fresh parsley, chopped
Preparation
Step 1
In a large saucepan, heat oil over medium-high heat; cook onions, carrots, celery, red peppers, salt and pepper for 5 mins, stirring occasionally, or until soft. Stir in lentils; cook until heated through. Remove pan from heat. Stir in vinalgrette and parsley. Serve warm or at room temperature.
