Ingredients
- 8 medium potatoes, peeled & cubed
- 1/2 C sour cream
- 1/3 C butter or margarine, softened
- 1 t salt
- 1/4 t pepper
- 1 C (4oz) shredded cheddar cheese
- 2 bacon strips, cooked & crumbled
- 1 t minced chives, optional
Preparation
Step 1
Place potatoes in a sauce pan & covered with water; cover & bring to a boil over medium- high heat. Cook for 15-20 minutes or until tender. Drain & mash. Add sour cream, butter, salt & pepper; beat until smooth & fluffy.
Transfer to a greased 2 1/2 qt baking dish. Sprinkle with cheese, bacon & chives if desired.
Bake, uncovered, at 325* for 20 minutes or until heated through & cheese is melted.
