Peach-Apricot Cobbler

Ingredients

  • Topping:
  • 1/2 c sugar
  • 2 TBS cornstarch
  • 1 can (13 oz) peaches, save juice
  • 1 can (10 oz) apricot, save juice
  • 1 TBS butter
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 c flour
  • 1/2 c sugar
  • 3/4 tsp baking powder
  • 1/4 tsp salt
  • 2 TBS butter
  • 1 egg

Preparation

Step 1

Preheat oven to 400'.

In a saucepan mix sugar, cornstarch, and stirin 1/2 c juice of each. Cook over medium heat until mixture boils and thickens. About 2 minutes. Stir in butter, cinnamon and nutmeg. Add the peaches, apricots and spoon into a 3 qt casserole dish.

Mix the toppings all together. Spoon over fruit. Do not worry if toppings are not touching. It will come together while cooking.

Bake in oven for 30 minutes.

Enjoy with a scoop of ice cream.
