Ingredients
- 2 doz. tiny potatoes
- Mayonnaise
- Sour cream
- Chopped chives
- Crumbled bacon
- Horseradish
- Lemon juice
- Chopped parsley
Preparation
Step 1
Scrub potatoes and boil until tender. Slice off top and scoop out center with 1/4 teaspoon measuring spoon or melon bailer. Dice the scooped-out potato and mix with mayonnaise and sour cream, chives and crumbled bacon You may season with horseradish, hot pepper sauce, parsley, lemon juice, or your choice of seasonings Note: If you can’t get tiny potatoes, then use small or medium ones and slice in half. Scoop out center, and proceed.
