Ingredients
- 1 (12 to 16 pound) turkey, thawed and dried
- 1 cup water
- 2 tablespoons garlic juice
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon red pepper
- 2 gallons oil
Preparation
Step 1
Combine salt, black pepper, red pepper, garlic juice, and water in a bowl.
Using a baster with needle attachment, inject marinade in the flesh of the turkey, especially in the breast.
In an 18 to 20 quart pot, heat oil to 325°F, or enough oil to completely cover the turkey. Slowly lower the turkey into the hot oil and reduce heat to 280 to 300°F for approximately 4 1/2 minutes per pound.
Carefully lift turkey allowing oil to drain from cavity and place on paper towel. Turkey should cool for 20 to 30 minutes before carving.
