SPINACH-SAUSAGE EGG BAKE

Ingredients

  • 1 lb Italian sausage
  • ½ cup Chopped onion
  • 7 oz Roasted red peppers
  • 10 oz Spinach dry
  • 1 cup Flour
  • ¼ cup Parmesan
  • 1 cup Shredded provolone
  • 1 tsp Basil
  • ½ tsp Salt
  • 8 Eggs
  • 2 cup milk

Preparation

Step 1

Pre-heat oven to 425 deg. Cook sausage and onion, transfer to greased 3 qt. Baking dish, sprinkle with ½ of peppers, top with spinach, combine flour, parmesan, basil and salt, whisk eggs and milk, add to flour mixture, pour over spinach, bake uncovered at 425 for 15-29 min, of until knife comes out clean, top with provolone and remaining red pepper, bake until cheese is melted
