Ingredients
- Topping:
- 6-7 sweet potatoes
- 1 t. vanilla
- 1/2 C. gold raisins
- 1/4 t. salt
- 3/4 to 1 C. sugar
- 1/2 C. soft butter
- 2 t. baking powder
- 3 medium eggs
- 2 t. butter
- 1/4 C. brown sugar
- 2 C. crushed corn flakes
- 1/4 C. chopped pecans
Preparation
Step 1
Boil potatoes till soft, peel, mash together. (or bake and scoop out potato) Beat eggs until yellow; add eggs and all ingredients to potatoes, and mash together. Put in 2 quart shallow baking dish (well-buttered/sprayed). Bake at 400 degrees for 20 minutes. Mix topping together: put on top. Return to oven. Bake at 400 degrees for 10 more minutes.
