Buttermilk Potato Salad

Ingredients

  • 3 pounds small red potaoes
  • 1/4 cup plus 1 tbs. sour cream
  • 1/2 cup low fat buttermilk
  • 2 tbs. prepared horseradish
  • 2 tsp. kosher salt
  • 1/4 tsp. freshly ground peppper
  • 1/4 cup dill sprigs
  • 1/4 cup finely chopped chives

Preparation

Step 1

1. Cover potatoes with water by 1 1/2 inches in a 2 quart pot and bring to a boil. Reduce heat and simmer until potatoes can be pierced easily with a tip of a knife, about 20 minutes. drain and let cool completely. When cooled, cut potatoes into halves, or quarters if large.
2.Whisk sour cream,buttermilk, horseradish, slat and pepper in a large bowl. Add potaoes to toss till combined. Gently stir in herbs just prior to serving
