Sesame Green Beans

Ingredients

  • 1-lb fresh green beans
  • 2 teaspoons sesame seed
  • 1 tablespoon rice vinegar
  • 1 tablespoon reduced-sodium soy sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon crushed red pepper flakes

In 2-quart saucepan, heat 1 inch water to boiling. Add beans. Boil uncovered 5 minutes. Cover and boil 3 to 5 minutes longer or until crisp-tender.

Meanwhile, in ungreased 8-inch skillet, heat sesame seed over medium-low heat 5 to 7 minutes, stirring frequently until browning begins, then stirring constantly until golden brown. Stir in remaining ingredients; heat through.

Drain beans. Pour sauce over beans; toss until evenly coated.


A 1-pound bag of frozen green beans can be substituted for the fresh green beans. Cook as directed on the package, then continue with the recipe.

Be sure to remove the sesame seed from the heat just as it turns golden brown. It will continue to brown even after you take it off the burner.
