Onion Cheese Soup

Ingredients

  • 1 large onion chopped
  • 3 T butter
  • 3 T flour
  • 1/2 t salt
  • pepper to taste
  • 4 c milk
  • 2 c shredded colby-monterey jack cheese
  • seasoned salad croutons
  • grated parmesan cheese

Preparation

Step 1

In large saucepan saute the onion in butter. Stir in flour, salt and pepper until blendid. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened.
Stir in cheese until melted. Serve with croutons and parmesan cheese.
