Mashed Sweet Potatoes

Ingredients

  • 3 medium sweet potatoes (about 2 lbs.), peeled & cut into 1" chunks
  • 2 medium garlic cloves, peeled
  • 1/2 cup plain fat free Greek yogurt
  • 4 t. sugar
  • 1/8 t. salt
  • 1/8 t. pepper

Preparation

Step 1

Place potatoes and garlic in large saucepan; add water to cover. Boil over high heat until potatoes are tender. Drain; transfer to large bowl. Add yogurt and sugar; mash until smooth. Season with salt and pepper.
