Gnocchi with Sausage & Broccoli Rabe

Ingredients
- 8 ounces store-bought fresh gnocchi
- 2 tablespoons olive oil
- 4 ounces raw sausage, casings removed
- 5 1/2 ounces broccoli rabe, roughly chopped (if you don't like broccoli rabe you can use broccoli or fresh spinach)
- 2 teaspoons garlic, chopped (about 2-cloves)
- 1/4 cup unsalted butter
- 2 tablespoons pecorino Romano cheese, shredded
- 1 teaspoon crush red pepper
- 1 teaspoon freshly ground black pepper
Preparation
Step 1
Cook gnocchi according to package direction in large pot of salted water. Drain gnocchi reserving 2 tablespoons cooking water. Set aside
Heat olive oil in a large skillet over medium high heat. Add sausage, and cook, stirring often, until fat has rendered and meat is just cooked through, about 3 minutes. Add broccoli rabe and cook, stirring often, until just slight wilted, about 1 minute. Add chopped garlic, stirring often and cook until garlic is golden, about 1 minute.
Remove skillet from heat; stir in butter and reserved cooking water. Add cooked gnocchi and toss until evenly coated.
Stir in pecorino, red pepper, black pepper. Toss. Season to taste with salt and more black pepper.
Serve immediately.
