Ingredients
- 1 lb. sweet and/or hot Italian sausage, cut crosswise into thirds
- 1 lb. small red potatoes, cut in half
- 1 jumbo onion (about 1 lb.), cut into 12 wedges
- 2 red and/or yellow peppers, cut lengthwise into 8 pieces
- 1 tbsp olive oil
Preparation
Step 1
Preheat oven to 450 degrees. Combine all ingredients, season with salt and pepper. Toss to coat.
Roast 30-35 minutes until potatoes are fork tender, stirring once halfway through roasting.
