Pickled Onions (Shelley MacDonald)

Ingredients

  • 25 lbs of silver skin onions
  • Makes 12 1/2 quarts of pickled onions
  • 1 litre Malt Vinegar
  • 3 liter Pickled Vinegar
  • 3 cups Sugar
  • 2 Tbsp Pickling Spice (wrapped in coffee filter)

Preparation

Step 1

Peel onions
Add salt and water, cover and sit for 24 hours

Drain onions

Combine ingredients for brine. Bring to a boil.

Heat jars and lids

Fill jars with onions and top with brine.
