Ingredients
- 8ounces8 ounces bacon
- Salt
- 5cups5 cups small broccoli florets
- 1 1/2cup1 1/2 cup quartered grape tomatoes
- 1-21-2 apples, chopped
- 1cup1 cup mayonnaise or Miracle Whip
- 1tablespoon1 tablespoon cider vinegar
- 1/3cup1/3 cup chopped onion
- 1/4cup1/4 cup sugar
- 3/4cup3/4 cup raisins
- 1/2cup1/2 cup sunflower kernels or thinly sliced celery
Preparation
Step 1
Cut the bacon into small pieces and cook over medium heat just until crisp; drain on paper towels.
Bring a large saucepan of salted water to a boil. Add the broccoli and blanch until bright green and slightly softened, about 3 minutes. Drain well, run under cold water to stop the cooking, and drain again.
In a mixing bowl, combine the mayonnaise, vinegar, onion, sugar and raisins. Add the broccoli, grape tomatoes, apples and celery if using and toss to coat with the dressing. Refrigerate for 1 hour.
Just before serving, fold in the bacon and sunflower kernels if using.
