Pumpkin Butter

Ingredients

  • 1 29 oz can of Pumpkin puree
  • 1 15 oz can of Pumpkin puree
  • 1 cup plus 2 TBLS apple juice
  • 1 TBL ground ginger
  • 3/4 tsp ground cloves
  • 2 1/4 cups white sugar
  • 1 TBL ground cinnamon
  • 1 1/2 tsp ground nutmeg

Preparation

Step 1

Combine pumpkin, apple juice, spices and sugar in a large saucepan; stir well. Bring to a boil and simmer for 30 minutes or until thickened. Stir frequently.

Spoon hot pumpkin mixture into hot jars, filling within 1/4 inch from top. Remove air bubbles, wipe jar rims. Cover at once with metal lids and screw on bands.

Process in hot water bath for 10 minutes.

Fresh pumpkin pure can be used also, use 5 1/2 cups for this recipe.

Makes about 7 half pints.
