Chicken, Sausage and Peppers IP

Ingredients
- 1 Tbs olive oil
- 4 links Italian sausage
- 1 broiler-fryer chicken, cut into pieces
- 1 onion, diced
- 2 cloves garlic, minced
- 2 Tbs red wine vinegar
- 1 14 oz. can tomato
- 3/4 tsp basil
- 1/4 tsp fennel seeds
- 10 shakes red hot pepper flakes
- salt & pepper
- 2 green or red bell peppers, quartered and sliced
Preparation
Step 1
Heat oil in pressure cooker. Prick the skin of the sausage in several places. Add the chicken and sausages and cook till well browned on all sides. While the chicken is cooking, dice the onions and cut the pepper into 3/4 inch thick strips. Remove the meat from the pan and set aside. Add the onions, green peppers and garlic to the pan, and cook till they begin to soften, about 4 mins. Add the vinegar and stir up the browned bits from the bottom of the pan. Add meat and rest of the ingredients. Bring to full pressure, stabilize and cook for 10 mins. Release the pressure and adjust the seasoning. Serve with a green salad and a large loaf of French or Italian Bread. The sauce is delicious and begs to be sopped up with bread!
