Italian Lemon Pound Cake

Ingredients

  • 3 c flour
  • 1 tsp. baking powder
  • 1 \4 tsp. salt
  • 1 c butter
  • 2 c sugar
  • 3 eggs
  • 1 \2 c buttermilk
  • 1 \2 c sour cream
  • 4 tbsp. lemon juice
  • 1 tsp. fresh ginger, minced
  • Zest of 2 lemons
  • 1 tsp. vanilla
  • Lemon Glaze
  • 4 oz cream cheese, softened
  • 1 tbsp. lemon zest
  • 1 \4 c lemon juice
  • 2 c powder sugar

Preparation

Step 1

Sift flour, baking powder & salt, set aside
In another bowl cream butter & sugar until light an fluffly
Beat in eggs, one at a tkmeMix in sour cream, lemon juice, vaniolla, ginger & lemon zesnt
Mix half flour mixture into the butter mixture
Mix with buttermilk and then adding remaining flour mixture
Mix just until flour disappears
Pour the cake batter into bundt pan
Bake for 70-80 minutes
Remove cake from oven and allow to cool for 5 minutes
Turn the cake onto platter
Spread the lemon glaze over the warm cake
