Ingredients
- For the Dressing:
- 8 oz penned pasta, uncooked
- 1 lb.asparagas, trimmed and cut I to 2 inch pieces
- 1 halved cherry tomatoes
- 1 \3 c thinly sliced purple onion
- 1 \3 c Greek yogurt plain
- 2 tbsp. Lemon juice
- 2 tbsp. Olive oil
- 1 tsp. Freshly chopped parsley
- 1 tsp. Sugar
- 1 tsp. Lemon zest
- Salt & pepper to taste
Preparation
Step 1
Boil the pasta for 12 minutes then add asparagus to the boiling water. Cook for an additional 2-3 minutes and then draoinpasta and asparagus run under cold water
Drain completely put in bowl and add the tomatoes & onion and toss to coat
Whisk together all the ingredients for the dressing and pour over pasta,stir to cook
