Asparagas Pasta Salad

Ingredients

  • For the Dressing:
  • 8 oz penned pasta, uncooked
  • 1 lb.asparagas, trimmed and cut I to 2 inch pieces
  • 1 halved cherry tomatoes
  • 1 \3 c thinly sliced purple onion
  • 1 \3 c Greek yogurt plain
  • 2 tbsp. Lemon juice
  • 2 tbsp. Olive oil
  • 1 tsp. Freshly chopped parsley
  • 1 tsp. Sugar
  • 1 tsp. Lemon zest
  • Salt & pepper to taste

Preparation

Step 1

Boil the pasta for 12 minutes then add asparagus to the boiling water. Cook for an additional 2-3 minutes and then draoinpasta and asparagus run under cold water
Drain completely put in bowl and add the tomatoes & onion and toss to coat
Whisk together all the ingredients for the dressing and pour over pasta,stir to cook
