Mediterranean Stuffed Chicken Breasts

Ingredients

  • 4 Bonless Skinless chicken breasts butterflied and pounded to 1/4 inch
  • 1 pkg. frozen chopped spinach thawed and squeezed of water
  • 1/4 C fresh grated parm.
  • 10 pitted calamata olives chopped
  • zest of 1 lemon
  • juice of 1 lemon
  • 4 large slices prochuto
  • S&P
  • Cooked pasta
  • Your favorite pasta sauce
  • Kitchen twine

Preparation

Step 1

Line each breast with a slice of prochuto
Combine the remaining ingredients in a bowl, spoon equal amounts onto each of the breasts and roll them up. Use 3 lengths of twine to secure each breast

Sear each breast on all sides in a cast iron skillet, move the skillet to a 350 oven and cook until chicken is cooked through about 20 minuts. 165 on an instant read. Allow to rest for 5 minutes

Serve over pasta and cover both chicken and pasta with the pasta sauce.
