Ingredients
- 1/4 cup soy sauce
- 1/4 cup dark brown sugar
- 2 TBS sherry
- 2 TBS freshly squeezed OJ
- 2 TBS hoisin
- 2 TBS freshly grated ginger
- 2 minced garlic cloves
- 2 scallions, thinly sliced, plus more for garnish
- 1 TBS dry mustard
- 1 tsp crumbled dry chile or crushed red-pepper flakes
- zest of 1 orange
Preparation
Step 1
Whisk ingredients together in bowl. arrange meat in shallow dish or plastic bag. Add marinade, rub gently in meat. Cover and refrigerate.
6-24 hours
Bring meat to room temp. Cook as desired, basting during first half to create glaze. Garnish with scallions
