Spicy hoisin marinade (pork, beef)

3/4 cup for 2 1/2 lbs

Ingredients

  • 1/4 cup soy sauce
  • 1/4 cup dark brown sugar
  • 2 TBS sherry
  • 2 TBS freshly squeezed OJ
  • 2 TBS hoisin
  • 2 TBS freshly grated ginger
  • 2 minced garlic cloves
  • 2 scallions, thinly sliced, plus more for garnish
  • 1 TBS dry mustard
  • 1 tsp crumbled dry chile or crushed red-pepper flakes
  • zest of 1 orange

Preparation

Step 1

Whisk ingredients together in bowl. arrange meat in shallow dish or plastic bag. Add marinade, rub gently in meat. Cover and refrigerate.

6-24 hours

Bring meat to room temp. Cook as desired, basting during first half to create glaze. Garnish with scallions
