Blueberry Corn Muffins

Ingredients

  • 2 packages "JIFFY" Corn Muffin Mix
  • 2 eggs
  • 1 cup sour cream
  • 1/2 cup apple juice
  • 1 1/2 fresh or frozen blueberries

Preparation

Step 1

Preheat oven to 400 degrees. Grease muffin pans or use paper liners

Combine muffin mix, eggs, sour cream, and apple juice. Blend well. Stir in blueberries. Fill prepared muffins cups 3/4 full. Bake 20-25 minutes. Cool in pan on a wire rack for 10 minutes before removing from pan.
