Beef Tenderloin with Balsamic Asparagus

Ingredients

  • 4 t olive oil
  • 4 4oz beef tenderloins
  • Salt & pepper
  • /2 t paprika
  • 1/4 t ground cumin
  • 1/4 t.gar;ic powder
  • 1 lb asparagus spears, cut into 1"lengths
  • 2 t thyme leaves
  • 1 t Dijon mustard
  • 2 t balsamic glaze

Preparation

Step 1

Heat 1 t olive oil in large skillet over med-hi heat

Sprinkle steaks evenly with 1/2 t salt, paprika, cumin & garlic powder. Pan sear steaks 5 min. each side.
Remove from pan & let stand 5 min.

Return pan to med-hi heat. Add 1 T olive oil. Add asparagus & saute 3 min. Add salt, pepper, thyme & mustard, tossing to coat. Drizzle with balsamic glaze.
