Baked Asian Chicken Meatball Lettuce Wraps

Ingredients

  • 1/4 cup Milk
  • 1/4 cup Breadcrumbs
  • 1 1/2 pounds ground chicken
  • 1 tablespoon minced garlic
  • 2 teaspoons fresh ginger grated
  • 2 tablespoons soy sauce
  • 1 egg beaten
  • 1/2 cup hoisin sauce
  • 1/4 cup blackberry preserves
  • 1 head Boston lettuce leaves washed and separated

Preparation

Step 1

Preheat oven to 500
Spray mini muffin pan

Stir together milk and bread crumbs. Let sit 5 minutes

Add ground chicken, garlic, ginger, soy sauce and egg to bread crumbs. Mix until just combined.

Shape into balls.

Bake 15 minutes.

While meatballs are cooking, whisk together hoisin sauce and blackberry preserves over med heat.

Toss meatballs in sauce assemble in leaves
