Ingredients
- Spices to season to your taste:
- 8 -9 large potatoes, peeled and cubed
- 2 medium onions, chopped (red or yellow)
- 5 large hard-boiled eggs, chopped
- 2 cups mayonnaise
- 1/2 lb. chopped cooked bacon
- 3 -4 tablespoons mustard, yellow or Dijon, optional
- 1/4 cup chopped pickle, sweet or dill or both, optional
- 1/4 cup chopped green or black olives or both, optional
- salt
- pepper
- celery seed
- garlic powder
Preparation
Step 1
Peel and dice the potatoes, then place them in a large pot and boil until tender.
Drain the potatoes, add onions, eggs and bacon and any other optional ingredients and season to taste with salt and pepper, garlic powder and celery seed.
Mix in mayonnaise until its the desired consistency.
Cool for several hours or overnight.
