SALMON CROQUETTES W REMOULADE

Ingredients

  • 1 1/4 c mayonnaise
  • 1 T capers
  • 1 tsp. of old bay seasoning or seafood magic
  • 1/2 tsp. minced garlic
  • 2 1/2 tsp. lemon juice
  • 1 scallion thinly sliced
  • 2 pre-cooked salmon fillets
  • 1 egg beaten
  • 3/4 c fish fry or panko crumbs
  • 6 dashes of hot sauce
  • 1/4 c remoulade sauce

Preparation

Step 1

. make the remoulade sauce and set aside

. combine the rest of the ingredients and add in 1/4c of the remoulade
form into cakes and fry on both sides until golden brown serve with some of the remaining remoulade sauce
