Chocolate Caramel Matzo Crunch with Chopped Nuts

Ingredients

  • 5 sheets matzo
  • 1 cup dark brown sugar
  • 1/2 cup butter
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup nuts, chopped
  • 1 teaspoon flaky sea salt

Preparation

Step 1

Preheat oven to 375°F. Line a rimmed baking sheet with foil, then a piece of parchment. Lay matzo over parchment to cover completely (pieces may need to be broken to fit).

In a small saucepan melt brown sugar and butter over medium heat until mixture comes to boiling or about 3 minutes, stirring constantly. Cook and stir 3 minutes more until thickened and deep amber. Remove from heat; immediately pour over matzo to cover completely.

Transfer baking sheet to oven; reduce temperature to 350°F. Bake 10 to 15 minutes, checking every few minutes to be sure caramel is not burning. If edges start to get brown, remove and reduce heat to 325°F and return to oven.

Remove from oven and immediately sprinkle with chocolate chips. Let stand 5 minutes to melt, then spread chocolate over matzo. Sprinkle with nuts and sea salt. Transfer to freezer or refrigerate to set, about 20 to 30 minutes. Break into large pieces. Store in airtight container at room temperature or refrigerate up to 3 days.
