Artichoke Spinach Lasagna

Ingredients

  • 9 lasagna noodles cooked according to package directions
  • onion to taste
  • garlic chopped to taste
  • 14.5 can vegetable broth
  • 1 Tbl chopped fresh rosemary
  • 14 oz can artichoke hearts, drained and chopped
  • 10 oz frozen chopped spinach, drained and squeezed dry
  • 28 oz pasta sauce
  • 3 cups shredded mozzarella cheese
  • 4 oz herb and garlic feta, crumbled

Preparation

Step 1

Preheat oven to 350. Spray 9x13 dish with cooking spray

saute onion and garlic for 3 min until tender.
Stir together with rosemary, artichoke, spinach and pasta sauce.

Spread 1/4 of mixture in bottom of prepared dish. Top with 3 noodles. Sprinkle with 3/4 C of mozzarella over noodles. Repeat layers 2 more times. Sprinkle crumbled feta on top layer.

Bake covered for 40 minutes, uncover and bake 15 minutes more.
