Ingredients
- 2 3/4 cups Flour
- 1/3 cup sugar
- 1 tablespoon baking powder
- 3/4 teaspoon salt
- 1 1/4 teaspoons Penzeys Cake Spice
- 1/2 cup cold butter
- 1-1/2 to 2 cups miniture chocolate chips (I like more chips and use 2 cups)or you can add raisens
- 2/3 cup canned pumpkin (15oz can)
- 2 large eggs
- Coarse white sparkling sugar, for topping
Preparation
Step 1
In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and spices.
Work in the butter until the mixture is unevenly crumbly.
Stir in the choc chips
In a separate mixing bowl, whisk together the pumpkin and eggs till smooth.
Add the pumpkin/egg to the dry ingredients and stir until all is moistened and holds together.
Yields 16 scones...I can only fit 12 scones on baking stone so I freeze 4 for later or bake 8 and freeze 8 and bake later.
Brush scones with milk and sprinkle Sparkling Sugar. Bake 17-18 minutes or until golden.
