Ingredients

  • Cut:
  • 1/3 cup butter into 1 cup flour and 2 tablespoons sugar.
  • Press into 11x7 ungreased pan
  • Bake at 350 degrees for 15 to 20 minutes, until set but not brown
  • Combine in mixing bowl:
  • 2 beaten eggs
  • 1/2 cup brown sugar
  • 3/4 cup coconut
  • 1/2 cup chopped nuts
  • 1/4 teaspoon salt
  • 1/8 teaspoon baking powder
  • 1/2 teaspoon vanilla
  • FROSTING:
  • 2 teaspoons grated lemon rind
  • 2 tablespoons lemon juice
  • 1 cup powdered sugar

Preparation

Step 1

Mix all ingredients well and spread and partially baked dough.

Bake at 350 for 25 to 30 minutes frost while still hot.
