Broccoli and Rice Pilaf

Ingredients

  • 2 T butter
  • 3 c chopped broccoli
  • 1/2 c chopped onion
  • 1-1/2 c uncooked long grain rice
  • 3 c chicken broth

Preparation

Step 1

In a medium saucepan, melt butter over medium heat. Add broccoli and onion and cook stirring frequently for 3 minutes. Add rice and cook stirring constantly for 1 minutes. Stir in chicken broth. Increase heat to medium high and bring to a boil. Cover and reduce heat and simmer for 15-20 minutes or until rice is tender.
