Ingredients
- 2 cup flour
- 1/3 cup sugar
- 2 tbsp. baking powder
- 1/4 tsp salt
- 2/3 cup butter
- 2 eggs
- 1/3 cup light cream
- 2 tsp grated lemon rind
- 1/4 cup lemon juice
Preparation
Step 1
Glaze: add after cooked
2 tbsp. lemon juice
2 tbsp. sugar
In bowl whisk together flour, sugar, baking powder, salt. With pastry blender, cut in butter until crumbly.
In separate bowl, whisk eggs, cream, lemon rind and juice. Drizzle over dry ingredients tossing with fork til mixture clumps.
Turn onto floured board and knead 8 times. Place on floured baking sheet. Pat into 3/4 inches circle. Cut into 8 wedges. Do not separate.
Bake at 350 for approx. 25 min
brush the lemon juice onto baked scones and sprinkle with sugar.
