Ingredients
- 1 stick (4oz) unsalted butter
- Grated zest of one lemon
- 2 tbsp fresh lemon juice
- Salt
- Freshly ground black pepper
- 1 pound linguine
- 3/4 cup freshly grated Parmesian Cheese
Preparation
Step 1
1. In a skillet large enough to hold all of the pasta, melt butter over medium heat. Remove from heat and stir in lemon zest and juice, a pinch of salt and pepper to taste.
2. Bring pasta to boil with some water and 2 tbsp of salt. Cook over high heat. Drain pasta and reserve some water.
3. Add the pasta to the sauce and toss well. Add cheese and toss again. Stir in 2 tbsp of cooking water if pasta seems dry. Serve immediately.
