Ingredients
- 1 1/3 C sugar
- 1/4 c butter
- 1 1/4 C shredded carrots
- 1 c raisins
- Handful of nuts
- 1 tsp. salt, cinnamon & all spice
- 1/4 tsp. cloves
- 1 C wholewheat flour
- 1 C white flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 4 oz. cream cheese
- 1 Tbls. orange zest
Preparation
Step 1
Preheat oven 375
Put sugar, butter, carrots, raisins, salt, spices and 1 1/2 C water in a saucepan. Heat over high heat stirring occasionally just unit mixture comes to a boil
Whisk flours, baking powder, baking soda together. Pour into warm carrot mixture. Stir to combine but do not over mix.
Spoon mixture into greased muffin cuts. Bake until brown and toothpick comes out clean. About 15 min.
Blend cream cheese with zest and serve on warm muffins
