Spicy Apple Glazed Meatballs

Ingredients

  • 1 egg
  • 1/4 c milk
  • 2 slices white or whole wheat bread, torn
  • 1 lb. lean ground beef
  • 1/2 t pepper
  • 1/4 t salt
  • 1/4 t cayenne pepper
  • 1 t vegetable oil
  • 1 c apple juice
  • 1/4 c soy sauce
  • 3 T packed brown sugar
  • 1-1/2 t cornstarch
  • 1 t ground ginger
  • 1/4 t cayenne pepper
  • 6 green onions, sliced

Preparation

Step 1

For the meatballs, in a large bowl, whisk together egg and milk. Add bread. let stand 10 minutes, just until bread is softened. Add ground beef, garlic, pepper, salt and 1/4 t cayenne pepper. Mix thoroughly with hands and wooden spoon. Shape beef mixture into 48 1" meatballs.
In a skillet, heat oil over medium heat. Cook meatballs, half at a time, turning occasionally, until browned and crusty on the outside and no longer pink on the inside; about 6 minutes per batch. Transfer to covered dish to keep warm. Drain and wipe out skillet.
For the glaze, in a bowl combine, juice, soy sauce, brown sugar, corn starch, ginger and 1/4 t cayenne pepper. In the same skillet over medium heat, cook and stir sauce until thickened and at a full boil. Cook and stir 2 minutes more. Return meatballs to skillet to glaze and heat through. Transfer to serving dish and top with green onions.
