Ingredients
- 2 1/2 lbs sweet potatoes cubed and peeled
- 1/3 c maple syrup
- 2 T melted butter
- 1 T lemon juice
- 1/2 tsp. salt
- pepper to taste
Preparation
Step 1
Preheat oven to 400 degrees Arrange sweet potatoes in an even layer in a 9x13 pan. Combine syrup, butter, lemon juice and salt and pepper in small bowl. Pour mixture over sweet potatoes and toss to coat.
Cover and bake for 15 minutes. Uncover, stir and cook stirring every 15 minutes. Continue to cook until tender and brown about 45-50 minutes more.
