Rhubarb sorbet

Ingredients

  • 5 stalks of rhubarb
  • 1/4 - 1/2 C sugar
  • prosecco ( Italian sparkling wine)
  • pinch of sea salt
  • whole - half paddle full of simple syrup with vanilla bean soaking in it

Preparation

Step 1

combine rhubarb, sugar and salt. pour in prosecco until rhubarb is just covered. cook until boiling. pour into blender with simple syrup to combine. pour into ice cream maker.
